Is it only me that eats homemade soup all year round? My Husband thinks it is hilarious in the Summer when he is sitting at the table in the garden eating a salad and I have got a bowl of soup. I just think you can't beat it no matter what the weather, healthy and full of vitamins I can whip up a soup from just a few ingredients.
Here is one of my favourite recipes from Sunrise Senior Living.
Butternut Squash & Lentil soup.
Ingredients:
400ml vegetable stock
150g butternut squash - peeled & diced
12g salted butter
2 onions - peeled and diced
3 carrots - peeled and diced
60g dried lentils
Salt & Pepper to taste
Method:
Make up the stock
In a separate pan, heat the butter on a medium heat.
Add the onions to the pan and saute for 5 minutes.
Add the carrots and squash and saute for 2-3 minutes.
Reduce the heat, cover and allow to simmer until the vegetables and lentils are tender, then using a hand blender puree until smooth.
Season to taste and add a swirl of cream for decoration and serve immediately.
Delicious!
Next on my list is this French onion soup, it really sounds yummy!
